The Little Truck is open for business

Leonardo Madrid and Lizet Jimenez recently opened a new food trailer called the Little Truck LLC in Pipestone.
The business is open Fridays after 2 p.m. at 320 Main Street East and Saturdays beginning around 10 a.m. or 11 a.m. at the E & J Laundry & Car Wash at 720 Third St. SE. The menu includes tacos, tortas, burritos and a hamburger that includes beef, ham, bacon, tomatoes, onions, lettuce, avocado, pineapple and hot dogs.

Madrid said they’ll be open by the Pipestone County Courthouse on Saturday, June 28 during Water Tower Festival activities, as well. He said they’ll only be selling burgers and hot dogs at that time.

Madrid said he’s a construction worker by trade and works for KHC Construction, the company that built Pipestone’s water treatment facility several years ago. He said he and Jimenez are new to the food business.

“We like to cook,” Madrid said. “That’s why we started this dream.”

He said they liked to cook for family parties and personal parties and people suggested they start selling their food. They took the suggestion and opened for business on June 14.

The couple also purchased the building at 320 East Main Street that was previously Ben Denton’s law office. Madrid said they plan to use the space for a business office and storage for their food trailer, and make other offices that can be rented by other businesses. He said that’s a longterm goal with no specific timeline.

Madrid and Jimenez live in Pipestone with their three children, ages 5, 9 and 11.
